Bring it on vegan bakers!

I know I’ve profiled a lot of incredible vegan bakers and bakeries in Seattle. I’m up to 5 or 6 and I haven’t even covered them all yet! But don’t let the fact fool you –– it is still likely a 7:950 ratio between vegan and traditional bakeries – so I say BRING IT ON BAKERS!

What that short prelude, I am happy to announce the recent opening of Vegan Cakes by JennyMac, a small custom vegan cake and cupcake shop run by Jennifer MacPherson. She uses her experience as an artist and a painter to bring color and creative decorations to her cake creations! (Aw, look at that rhyme!)

Although Jenny did work in a bakery, she really learned most of her baking skills from her mother and even as a young kid she would create her own recipes. So far the hits have been her Ginger Spice Cake and her Lemon Cake with Raspberry Preserves. Her favorite is the German Chocolate cake and she is now working on creating a Mojito cake (lime and rum cake with mint frosting). And TA-DAH, now introducing her newest cake creation for Independence Day: Vanilla Cake with Strawberry Preserves, Vanilla buttercream, topped with Strawberries and Blueberries, and a homemade American Flag! If this doesn’t turn you into a stand-up patriot, I don’t know what will.

She loves being part of a celebration such as a birthday or wedding and making people feel special, but it’s not all about the party for her. Although Jenny is a recent vegan convert, she is passionate about the health and earth-friendly benefits of going vegan, and links to Action for Animals on her website. She truly cares about her cake ingredients and uses vegan sugar that has not been processed with animal bone char like many refined white sugars, 100% whole wheat flour, which has more protein, fiber and nutrients than refined white flour, aluminum-free baking powder, and Vegan “butter” that is made from all-natural non hydrogenated oil which and is a good source of ALA omega-3’s. She can also do soy-free, gluten-free, or low sugar by request.

OK, not only all of this, but her prices are reasonable! And if you need her to she can deliver for $1/mile. She can do parties, weddings, catering, delivery, or just pick up for every day. We buy a few vegan cakes a year at my work for birthday parties, and it is always hard for someone to leave work and get the cake, so delivery is super cool in that situation. I hope it means more vegan cake all around!
