If you don’t know who Rip Esselsyn is, then I suggest doing a few YouTube searches for this amazing guy! I had a chance to interview him in May of 2011 when the Forks Over Knives film launched here in Seattle. He is a retired fire fighter, former Olympic swimmer, Iron Man triathlete, author of the Engine 2 Diet, and son of much beloved Dr. Caldwell Esselsyn. Rip approaches veganism from a health perspective, and does so in a way that resonates with the “manly man” archetype and those infrequently associated with progressive eating habits. He’ll be in our town Thursday June 6 at some local Wholefoods markets.
